Chicken Slow Cooker Meals for Maternity Leave

PUBLIC SERVICE ANNOUNCEMENT: I LOVE SLOW COOKER MEALS.

Seriously. They can be so simple, don’t require a ton of work, and you end up with a hot and healthy meal all ready for your family at the end of the day.

I loved putting together some recipes for ground beef slow cooker meals, and they’ve been awesome so I thought I’d move on to chicken!

Just as a reminder, we try to eat low-carb/keto in our house, but these recipes are great regardless of what diet you do (or don’t) follow! They can always be adapted and served however you want!

Once again, we packed up the kids and headed to ALDI (our local cheap grocery store). Here’s your shopping list:

Shopping List

  • 18-24 chicken breasts
  • 2 (4-ounce) jar sliced mushrooms
  • 2 (10-ounce) can condensed cream of chicken soup
  • 1 block Swiss cheese
  • 16 oz sour cream
  • 2 chicken bouillon cubes
  • 2  (10 oz) can diced tomatoes and green chilies
  • 2 packs of taco seasoning
  • 2 packets ranch seasoning
  • 2 (8 oz) packages cream cheese
  • 2 packages of bacon
  • 1 block cheddar cheese
  • 6 bell peppers – any color
  • 2 onions
  • 2 packets fajita seasoning

At ALDI, we paid $49.96 for all the ingredients we needed! That’s $6.25 a meal, and you might even have some of the ingredients already at home! SCORE!

These recipes are doubled to create TWO 4-6 serving meals per recipe. That gives you (at least) 8(!!) slow cooker freezer meals ready to go!

Pull out your gallon-sized freezer ziploc bags and get ready to label and dump ingredients. After that, you can pack them into your freezer and pull out whenever you need a quick and easy meal!

Crockpot Chicken Fajitas

  • Label your bags “Chicken Fajitas” and write these directions: “1. Thaw overnight. 2. Dump in slow cooker and add ½ cup water. 3. Cook on low for 7-8 hours.”
  • Dump these ingredients into each of your freezer bags:
    • 2-3 chicken breasts, cut in halves
    • 3 bell peppers, sliced
    • 1 onion sliced
    • 1 packet fajita seasoning

Crockpot Chicken Supreme

  • Label your bags “Chicken Supreme” and write these directions: “1. Thaw overnight. 2. Dump in slow cooker. 3. Cook on low for 6-8 hours. **Don’t forget swiss cheese”
  • For this recipe, you will also need two sandwich sized freezer bags for the swiss cheese (or you can add it fresh when you cook this meal)
  • Dump these ingredients into each of your gallon freezer bags:
    • 2-3 chicken breasts, cut in halves
    • 5-7 slices cooked bacon
    • (1) 4 ounce can of mushrooms
    • (1) 10 ounce can of cream of chicken soup
  • Shred or dice 1 cup swiss cheese and split between 2 sandwich bags

Crockpot Crack Chicken

  • Label your bags “Crack Chicken” and write these directions: “1. Thaw overnight. 2. Dump in slow cooker and add 1 cup water. 3. Cook on low for 7-8 hours.”
  • Dump these ingredients into each of your freezer bags:
    • 2-3 chicken breasts, cut in halves
    • 1 chicken bullion cube
    • (1) 8 ounce package cream cheese
    • 8-10 slices of cooked bacon
    • 1 packet ranch seasoning

Creamy Mexican Chicken

  • Label your bags “Creamy Mexican Chicken” and write these directions: “1. Thaw overnight. 2. Dump in slow cooker and add 1 cup water. 3. Cook on low for 6-7 hours.”
  • Dump these ingredients into each of your freezer bags:
    • 2-3 chicken breasts, cut in halves
    • 1 chicken bullion cube
    • 1 cup sour cream
    • (1) 10 ounce can diced tomatoes and green chilies
    • 1 packet taco seasoning
